Standing Ovation is a microbial-based foodtech company created in 2020 and based in Paris. Standing Ovation is using precision fermentation with a specific E.Coli host to produce cheese caseins. The team has developed as first product prototypes creamy cheese and soft paste cheese and plan to partner with dairy industrials to finetune the formulation and sell their product.
